May is Celiac Disease Awareness Month, which is a serious condition requiring people to eliminate gluten altogether. The Center for Celiac Research estimates that 18 million people (or six percent of the population) may suffer from some type of gluten intolerance. For any patient who tests positive for the autoimmune disease, a strict GF diet is mandatory.
